Oil-Free Courgette/Zucchini Pesto Pasta

This zucchini/courgette pesto recipe is so delicious and fresh. It goes perfectly with pasta, bread or even instead of the tomato base on a pizza (I even used it on my vegan flatbread pizza, picture below). The fact it has zero oil in, makes it perfect for those looking for delicious Forks over Knives recipes or just trying to cut down on their oil intake. I hope you enjoy it!

Ingredients for Oil-Free Courgette Pesto:

  • 2 courgettes/zucchinis

  • 3 garlic cloves

  • 100ml of boiling water

  • 1 lemon

  • 30g of fresh basil

  • 50g of pine nuts

  • 30g of rocket (about 1 handful)

  • 1/2 tsp of salt (may need more depending on personal preference)

  • 1/2 tsp of pepper (may need more depending on personal preference)

  • 200g of pasta (you can also sub for GF pasta)


1. Firstly add your pasta to a pan with boiling water and cook according to the packet instructions.

2. Then, thinly slice your courgettes and garlic and them to a frying pan with 100ml of boiling water on a medium heat. We're essentially going to shallow boil them.

3. Cook the courgettes and garlic until the water has evaporated, then add the juice from 1 lemon. Again, cook until the lemon juice has disappeared. By now, your courgettes should be really soft (if they are not, add boiling water 1 tbsp at a time and cook them until they have fully softened).

4. Now, add your cooked courgettes and garlic to a blender along with the basil, 25g of pine nuts, salt and pepper. Blend together until a smooth texture is achieved.

5. Combine with cooked pasta, rocket and the remaining 25g of pine nuts. Add any additional salt and pepper to taste and then serve!
