Curried Quinoa One-Pot

Hearty? Absolutely. Full of flavour? You bet. Packed with goodness? Plenty of it. This vegan curried quinoa one-pot is so delicious and easy to make, and it only takes 30 minutes from cutting the first vegetable, to serving it.


Ingredients for Curried Quinoa One-Pot:

  • 1 tsp of coconut oil (you can also sub for another other vegetable based oil)

  • 1 yellow pepper

  • 1/4 of a medium sized red cabbage

  • 1 large handful of kale

  • 1 large handful of spinach

  • 120g of quinoa

  • 2 x 400ml cans of coconut milk (I used reduced fat coconut milk)


For the Curry Paste:

  • 1 tbsp of tomato puree

  • 2 tbsp of vegetable/rapeseed/sunflower oil

  • 1 salad or plum tomato

  • 1 small red onion (or 1/2 a large onion), peeled

  • 1 large red chilli

  • 2 garlic cloves

  • 2 tsp of grated ginger

  • 1 tbsp of curry powder

  • 2 tsp of cumin

  • Juice from 1/2 a lemon

  • 1 tsp of salt (you can add more to taste)

  • 1/2 tsp of pepper (you can add more to taste)



Method:


1. Firstly, thinly slice your pepper and cabbage, then add to a pan with the coconut oil on a low to medium heat.


2. While your veggies are softening, add all your curry paste ingredients to a blender and blend until smooth.


3. Then, add your paste to the pan, along with all the coconut milk and quinoa and then stir well.


4. Increase the heat so that the coconut milk begins to boil, once it starts bubbling reduce to a low heat. Cook for around 15 minutes and then add your spinach and kale and then stir well.


5. Once all the coconut milk has been absorbed by the quinoa, taste it to ensure it is soft and fully cooked. Then add any additional salt and pepper if you wish.


6. Serve and enjoy!
