I absolutely love one pot pasta recipes, mainly because they are so easy to make but they are always packed with flavour. This vegan pasta only takes 30 minutes from start to finish and is perfect for a quick, healthy weeknight recipe.
Ingredients for Creamy Mushroom and Spinach One-Pot Pasta:
2 heaped tablespoons of cashew butter
450ml of almond milk
350ml of boiling water
3 tbsp nutritional yeast
2 garlic cloves, pressed
300g of pasta (try not to use wholewheat pasta as it takes a lot longer to cook)
200g of mushrooms
300g of cherry tomatoes
2 handfuls of spinach
1/2 tsp of salt
1/2 tsp of pepper
1 tsp of olive oil
1. Firstly, chop your mushrooms and add to a pan with olive oil on a medium heat. Cook for around 3 minutes.
2. Then add all your ingredients to the pan except for the spinach. Mix everything together and then raise the heat on the hob so that it starts to boil. As soon as it starts to boil, reduce the heat to a low simmer.
3. Cook the pasta for around 20-25 minutes, stirring regularly.
4. Once the pasta is cooked (it may be worth trying a bit to make sure it's fully cooked) take off the heat and mix through your spinach. The heat from the pasta should wilt it.
5. Serve and enjoy!
If your pasta is not cooked after 25 minutes, add a tiny bit more water or almond milk to the pan and cook for a bit longer/once the pasta has softened.
