Chickpea and Spinach Curry

I absolutely love curry, chickpeas and spinach so all of them combined is my idea of a perfect meal. This vegan chana masala is really easy to make and tastes amazing when served with rice, naan or sweet potato. It can be a quick and healthy midweek dinner, or a delicious dish to show off your cooking skills at a dinner party. If you are wanting to accompany it with any Indian inspired sides, try making my easy homemade onion bhajis with a fresh mango salsa (they are my favourite).

Ingredients for Chickpea and Spinach Masala:

  • 1 x 400g can of chickpeas

  • 1 x 400ml can of coconut milk

  • 1 large handful of spinach

For the Curry Paste:

  • 2 tbsp of vegetable/sunflower/rapeseed/coconut oil

  • 1 salad or plum tomato

  • 1 small red onion, peeled

  • 1 garlic clove

  • 1tsp of grated ginger

  • 1/2 tbsp of tomato puree

  • 1 tbsp of curry powder

  • 1 tsp of ground cumin

  • 1/4 tsp of cayenne pepper (optional)

  • 1/2 tsp of salt (you can add more to taste)

  • 1/2 tsp of pepper (you can add more to taste)

To serve (optional):

  • Fresh coriander

  • Rice

  • Naan

  • Baked sweet potato


1. Begin by adding your coconut milk to a pan and place on the hob on a medium heat.

2. Then, add all your curry paste ingredients to a blender, and blend until smooth.

3. Drain your chickpeas and add to the coconut milk along with all of your curry paste, and then stir well.

2. Cook for around 15-20 minutes, stirring often. If you're having rice with your curry, this is a good time to get it cooking.

3. Once your curry is cooked and hopefully smelling amazing - take off the heat and add your spinach. The heat from the curry will wilt the spinach.

4. Serve and enjoy!

If your curry ends up quite thick, try adding 50ml of water or plant based milk (almond, oat, soy etc) to loosen it up slightly.
